The windows and linux versions of VO are able to switch from window to fullscreen modes by pressing alt (or is it ctrl?) + enter.

This combination doesn't work on Mac and there doesn't seem to be one for this?

It's not a bug, it's a missing feature. (Also missing is the ability to switch between fullscreen and windowed modes without reloading the textures in between, which on modern hardware at least is possibly with some shared context voodoo...)

Seriously, why isn't there a key combo? I know it's supported because other games (most Blizzard games, UT2004) have it.
