generaly the hardest thing for me to beat is the mirror match (my styal requires a difference in weapon velocity/charge times to be effective) additionaly i have a harder time against rail-guns than any sort of rapid fire weapon (i can't use the spray as a dodge guide)
but as for ship classes:
1. Rev C and IBG (so darned fast and nimble)
2. Prom (a good and deadly ship but also an under used ship so i don't get much experience fighting them)
3. busses ( i feal guilty killing them for some reason)

I dont find anything hard to beat with certain people flying it.
I find some people hard to beat regardless of what they fly!
For example, no matter what Eldrad flies, I just cant even hit him, usually (then again, I have not really encountered him in a heavy, hmmmm)
Martins prom can be downed, but its damn hard (dont even mention UD)
Certain people in proms are meat, some people in rev c's and ibg's are also meat (me winks at hawkeye)
So asking me what ship i find hard to beat is irrelivant. I think just about all ships are evenly balanced, or have a just as capable opponent.
Prom = Centaur, n maybe cents, valks with the right loadout.
Cents = Hogs n some valk pilots can eat em
Valk = cent fodder, prom meat

Ze moth! Ok, usually if someone turns to fight, they are dead, but catching and killing a running moth, thats piloted by someone with even a little nouse is still damn hard.

haha, tell that to spuck... didn't I beat up his corv maud with my megaposi moth a couple weeks ago?
a moth that turns to fight will beat the stuffing out of ANYTHING that relies on ordinance. a rocket cent couldn't down a moth even if it never missed, and evading enough rocket volleys from a rag to survive isn't all too difficult either. You don't even have to worry if they don't have energy, and even then some craft/pilots won't stand up to the beating a moth can give them.
as for running moths... all you really need is a megaposi rag/hog/taur (the rag is great for catching them if you load sunflares in addition to the megaposis). All that's really required is something with low turbo drain, high turbo speed, and an L-port. (use with a heavy battery to afford maximum firing capability - it IS more effective unless you let them jump). Of course, if you have a valk with a neut II and a pair of sunflare rockets, there's no need for something heavier...
yes, differednt people really make the difference... if I had to chose between fighting Niki in a Prom and Niki in a cent, I'd take the prom, whereas if I had to make the same choice for Martin, I'd take the cent. DIfferent people are more effective in different ships. Nevertheless, for the vast majority of them, denying them the use of a prom/cent/valk would do a lot to make them easier to beat.
EDIT: Yes, it is difficult to beat roids... much as it is difficult to beat up the bunchies UFO when the dev flying it chooses invulnerability. This is why I do not fight with roids.

I never leave home without a lazer :) a stream of nt2 does wonders :) the rockets just help throw em round, they ain't for damage

Picture this: A group of 8 proms. Agt flare on all of them. It would be unstoppable. A group of 8 cents or 8 valks, not nearly as deadly.
The fact that it is just as easy to get 8 SCP's together as it is to get 8 valks together, and the fact that while the prom group would be untouchable should be proof that the Prom is overpowered. Think abour, there is NOTHING that would be able to stop a group of proms, short of a cap ship anyways. What if SCAR one day said, okay, we're all going to fly SCP's. They would be unstoppable in a group, hell two good prom pilots are near unstoppable in a group.
This doesn't happen for two reasons:
a. everybody would run from a group of proms
b. not a lot of people like to fly proms because they get bored with how easy it is to kill.

im a thinking that the warthog with megaposi and aap, and a centurion with 2s's and a vulture are my hardest ships.

You should not have to have a cap ship in order to keep a type of one manned fighter ship in check.
Proms are supposed to be very powerful, slow fighters. A group of 8 proms SHOULD be more deadly than 8 light ships.
And I think a group of 8 Tang Aggresso's (with 2-GT) could beat 8 proms.
