I think it would great if we had a laser guided missile that could actually hit the target (using a1k0n's uber seeker code) provided you kept the nose of your craft pointed at the target at all times. If your nose moved away from the target then the seeker would stop tracking until you reacquired the target.
Or better yet, the laser-guided missile could revert to a yellowjacket-level homing system if the lock was lost.

Yet another idea would be to give some missiles a "field of view" of 60 degrees or so, and have the missiles track the target only if it was within their field of view. That way the missiles would not double back and continue to track the target after the first time they miss.
edit: In case I didn't make it clear, TS-Midnight, one difference between the laser guided missile and the missile you suggest is that you would have to guide the missile all the way to the target by keeping the nose pointed in the right direction... it wouldn't be a fire and forget weapon.

for homing missiles, you can't expect to keep a permanent lock on a target. the missiles _are_ fire and forget. yes, you get spamming, but yes, in a light fighter, you can avoid them without too much difficulty. this I find to be rather okay.
rockets, well, I've never really used them much. they just don't seem to be good enough compared to missiles -- unless you're hunting very big game. :-)
