Docking/landing
Would it be too hard to have open stations that instead if just magically docking when we get near the entrance, we would actually have to fly in and land in a specific port? All of the sips would have to be equipped with landing gear to make this work.
I vote we implement a station interface like this.

Yes, it would be too hard.
Or, basically, we would spend like 6 months implementing some crazy immersive docking bay experience, instead of fixing more important things.

I seriously doubt 6 months is even a quarter of the time that would actually take, because VO.
+1
Would open up Planet Landing
And would (Possibly) make the VR Experience in VO more interesting.

No, it would not open up planet landing. The existing docking mechanics would already work just fine on the ground; they are not at all the issue. I'm pretty sure it's more an issue of the planets themselves, as well as dealing with their scale compared to VO's flight mechanics, and some other things like making landing on them be worth the effort of implementing them, adjusting the engine to work well with large swaths of terrain instead of mostly empty space, etc.
If you really want to land on planets in an online space game, you should go play StarMade or Shores of Hazeron; or if you don't mind it being a single-player game, try Pioneer (which also has a docking process much more like the OP asked for).
But of course, I don't consider the combat in any of those games to come even close to as fun as VO's is. They're all fun in their own ways though.

I tried Elite:Dangerous and it took me a week to dock successfully. It's atrocious.
Docking in E:D was one of my favourite parts of the game, but E:D is not VO. What was NOT fun was waiting at an outpost for a free landing pad with a popped canopy, and your O2 reserve running out...
I would love to see similar docking in VO, but as Inc said, there are more important things needing dev time. Perhaps we will see E:D style docking in 2.0... perhaps not. Again, E:D is not VO.
