Since in space a craft has an immense degree of momentum, I think we aught to enable ships to cut their engines automatically after reaching a desired speed, and break via reverse thrusters rather than decreasing engine power. In extreme circumstances a pilot may disable the auto-cut function on their ship in order to accelerate indefinitely, but with the risk of loosing control. We can add this to the realistic flight mode, or perhaps create a new mode entirely designed for such dynamics as the above.
This isn't a space simulation game. Think about how this suggestion would impact game play.
-1 there is resistance in fluid space which also allows us to hear each others engines, weapons and honks (that's how I look at vo's physics). That said... it's more fun to blow up ships that have a limited top speed. And you can already break and increase speed with thrusters if you turn fa off.

I have played a "real physics" game with twitch-style combat. It goes something like this:
Empty space
(1 second later)
"Ooo! A dot ahead!"
(1 second later)
SHIP! PEW PEW PEW
(1 second later)
"Oh...a dot back there"
(1 second later)
Empty space.
If we were going to play this way, the devs could ignore ship art and concentrate of fire-and-forget weapons.

In my opinion, the "physics" of the current VO is one of its strongest traits.
