WW II Style Fighter
The flight assist option is kind of fun, because it makes your ship like an airplane. This style of flying can be more intuitive to some, as you don't have to worry about flying in reverse.
As opposed to ships with more or less ubiquitous maneuverability, the suggestion is create a whole new style of ships that only have the engine on their back; in other words, sort of like a modern fighter, you could turn, and accelerate forward, but nothing else.
I'm certain this style of flying would appeal to a large crowd, for a variety of reasons. To start, it'd be an easier control scheme, both in terms of learning, and buying joysticks for, since there would be less axes of movement needed. Those who like to use the little throttle thingies would have their opportunity. Fighting against each other would be a refreshing change from the usual style of VO combat. Having a diverse range of ship styles allows pilots to specialize, whereas currently if you can fly one ship, you can more or less fly them all. They could also be given unique advantages to deal with content not yet in place; for example, they could all be dedicated anti-Capship fighters, only useful against large ships or each other, in place of normal combat abilities, so as to not disrupt the current combat balance; normal ships would reign supreme in the current system of basic dog fighting.
In an earlier post, I described a style of ship that would modify its thust based on proximity to asteroids, the key piece being that it places importance on the terrain in VO; they would need to fly near rocks to be effective, essentially making them "ground" units. In the same sense, perhaps these WW II style fighters would be hindered near asteroids, making them more of "air" units, devastatingly effect in their element, but more limited than standard space vessels.
