Bot AI
I'm kinda pissed with the bot AI. I'm fighting a fennus guardian and it doesn't even fight like real. It gets really close and runs into me and I can't turn to shoot it because my ship is too long and skinny! What am I supposed to do? Die. I've lost hundreds of thousands of creds this way. I think the AI for bots should be greatly improved.
Perhaps your fighting technique needs to change.
You can't just ram forth a ship (/bot) who will itself try to ram and hinder your movement as defense. In this respect, the Fennus Guardian does an OK job. Given it's job designation, it could (/should?) probably be even more agressive. So the Fennus Guardian is not at fault. Your tactic or ship choice against it is not appropriate.
One bot whose AI is too permissive is the Hellman Overseers. It will not start shooting (AGTs) until it's within 200m or so from you. So, flight-assist off, all you have to do is thrust backward and keep it out of that 200m radius. It will just look like it's sitting there in front of you with very fiew vector adjustments, not shooting anything at all until it reaches that 200m distance.
You then have plenty time to shoot it down, throwing an occasional missile just to keep it out of range.

ghool -
Turn flight assist off and strafe in one direction to put some space between you and the Guardian. (Maybe add a little roll if they get close to ya) Watch their gauss shots, and circle strafe them or backroll - they're a huge target, and easy kills once you get the hang of it. (I'm not trying to sound condescending, it took me 6 or 7 months to "get the hang of it", so I feel yer pain.)
Now, Arklans on the other hand, are a little more difficult...
One more suggestion: I always bot with light fighter-type ships, and always use energy weaps. Cents, Hogs, Vults, Valks, even maybe Mauds are good to bot with.

I never use flight-assistant, Lebermac. And I do strafe in one direction and even go backwards, but the hellman stops shooting and boosts forward into be. What I don't get is how a fat ship like that can keep up with the speed and agility of the warthog MKIV. Not even the smaller Valent bot, which is even worth more combat points, can keep up with it. Why is it worth more points if it's 3 times easier to kill?
Than don't go after the hellman...
And if it rams you to make it more difficult to kill, the Bot AI is doing its job.
If you want combat XP, go for the sedina queens! Has anyone figured out when they give you the XP?
But branching off on this topic, I have a bit of a problem with the convoy escorts, particularly the cents and vults. Although they don't try to, I usually wind up within 30m of them when fighting if I go forward. Then they go to 10m. It's nearly impossible to turn fast enough to hit them in sight, meanwhile they have near-100% accuracy.

Yeah actually I was talking about the fennus. And the fennus are in the queen sectors. They come after me a lot before i get to the qqueen and I have to fight not to die most of the time. Problem is I die a lot even then. It's abnormal! Especially their speed, being such big ships.
The few convoy escorts Ive attacked (the hogs) exhibit a weird behaviour...when face to face with one, my first shot causes it to spin, face away from me and start firing in the wrong direction...then they backroll into my guns...its very odd IMO...

Get out of the way!
a combination of the Flight assist on and off will let you evade them. But you'll need to use more than just left/right strafe and roll, you have to maneuver AROUND your opponent using all strafes and rolls
