Why is this? In the options its even checked to do so... Heres a picture of me showing that it isnt either..

Maybe im confused how this should be working, but im pretty sure I should be see ores on my list towards the right. It shows everything besides ore.

You need to type the following into chat:

/targetless

and push enter. You will then be able to access the targetless interface with different options including the ability to look through lists of scanned ore.

The default button to scroll lists is the dash "-"
you need to change the list displaying to "Ore".
You're in the PvE "allships" display.
