In Lecter's defense, he said that he found his own hate of obese people irrational. It doesn't make it acceptable, of course.
Why white wine, though? Is it the (generally) high level of acidity? Because there are some truly awe-inspiring white wines I've tasted.

I'm excluding botrytized sweet white wines like Premire Cru Supérieur and Premire Cru sauternes and 5 or 6 puttonyos tokaji aszu, which have (to me) both a pleasing feel and interesting depth and complexity of flavors. Other whites tend to be too simple/dry/one-dimensional/boring for my liking, even other sweet whites like reislings, ice wines, etc. I'm also not a fan of champagne, though, even some of the really excellent vintages, so it is quite subjective.
Hmm. I like both red and white wine, as long as it's good... I have to admit that I haven't had botrytized wines other than Tokaj so far, though.
