A beginner's question about mining
So as I understand mining, I need:
1. A scanner, to tell what's in a rock
2. A mining beam,
3. Some weapon to defend myself with.
So at a minimum, any ship that even a beginning miner needs must have either 3 small ports, or two small and 1 large port.
Yet unless I missed something, I can't get something that big at the start.
What am I doing wrong?

To mine, you need:
1: A ship with one port. (This includes cargo hold.)
2: A mining beam for said port.
3: A battery to power the ship and mining beam.
4: An asteroid to mine from.
EDIT: I recommend to start observing and experimenting before asking, because you wont receive advice all of the time, helpful or not.
EDIT2: Now, if you want to mine in unknown and 'dangerous' places, then yes, a mining beam, a mineral scanner, and a weapon on a 3 port ship will help as long you know how to use it aptly in situations that prompt such a configuration.

Are you really saying that in a PvP game, where nowhere is safe, I should be flying around without any weapon as normal practice? Ever?
That seems suicidal.
Oh yea -- with one trade level, I can get a 2/1 ship. But no large mining beam, nor large scanning beam, nor any way to put a small weapon in a large slot, and the only available large weapon has an ammo limit.

Take the mining tutorial at any mining station for free equipment, level 1 mining license, and pointers.
You don't need a scanner if you don't want to have one, or want a free port for weapons or another beam. It's rather unlikely something/somebody will attack you if you're in monitered/guarded space.

It's a game of trade-offs. Risk vs Reward is one we still are working towards. For instance, the highest capacity trade ship (Behemoth XC) has no weapon ports of any kind. And this is the only vessel that can handle 200cu loads, which will become more important as part of the crafting system. This adds a benefit to teamwork.. someone to escort you while transporting a large item, etc. Same goes for mining.
Keep in mind that asteroids block radar. You can use that to help you hide if somebody does happen to enter the sector looking for you. If you're lucky you might be able to sneak out and warp someplace different before they can track you down.
Also consider net-profits. Even if you get blown up once or twice, your ship and gear don't cost much. If you don't do anything stupid, you should be able to easily make more than enough money to replace it and still have a profit.
As for the scanner, you technically don't need it at all, but it is useful to know which roids to mine. What you can do is go in first with the scanner to locate roids you like, then come back with a mining beam. (I prefer to use a ship with two or more weapons ports so that I can equip several mining beams at once - more efficient.)
Later on you will be able to get access to a couple ships that have built-in scanners.

Download/install targetless ( http://targetless.com ), it will let you scan roids and then target them later even when you don't have a scanner installed.
When mining I never equip weapons.
Then again, I do not regularly mine in Grey or Serco space, as either generally means you'll run into someone who wants you dead eventually.
Itani and UIT space is generally safer, although there is the odd player who just wants to see things blow up. Having a weapon over a mining beam decreases efficiency, which is a bad thing.
