If memory serves, back in my UIT days I mostly did trading, mining, running, and exploding ("explode" IS something you do, so Nyaa to pirates).

Just start shooting people and you'll make friends.

In terms of UIT Guild's, there's not (to my knowledge) ANY UIT nationalist guilds. However, there are several multinational guilds that accept UIT members, and I know the nationalist guilds SDF and I believe ITAN both accept UIT members into their ranks with sufficient proof of that UIT pilot's allegiance to their particular nation.
If you fit the usual UIT ideology of Trade with Neutrality, then you may want to look at TGFT (The Guild of Free Traders).

The Coalition of Itan does not accept UIT members. If you're that geared towards the Itani culture, then you should be Itani in the first place.

Matt, what do you like to do in VO? Trade, mine, fight, etc...?

It's mostly trading and mining for me. Teasing pirates, while generally not conducive to a long and healthy life, makes both of the aforementioned activities much more interesting.
