What is the limit to the guild bank activity logs? Is there a max size before it starts overwriting old entries? Also is there a table I can see the full logs and not just one 10 line page at a time?

There is currently no limit. You will eventually be able to view more than 10 at a time from the web site, but right now there is no way to get more than 10 at a time.
