For normal flying, I use mouselook and FA with a mouse+keyboard. During a dogfight, I tend to turn off FA or leave it on with a varying amount of forward thrust. If I'm expecting to be in a dogfight, I also usually switch to a trackball, because it allows continuous rotation without having to pick it up (like a joystick, but with the precision of a mouse, and it allows mouselook to work). I'm thinking of getting or building a pair of pedals to control thrust, because I find it a little difficult to manage both thrust and strafe with one hand via the keyboard.
Maybe get one of those rudder devices and tweak it around? save ya some time maybe..

I'm a switcher, and I also use a joystick. Depending on the stick, physics can work EXTREMELY well... I have a MS Sidewinder Force Feedback Pro, and it has four buttons on the left side with good placement similar to WASD. I can control thrust and strafe with them, general manipulation with the stick itself, primary/secondary fire, etc... so nearly 100% of all my controls are on the stick itself. Very nifty.
